Recipe Connection: Golden Broiled Salmon

Note: This is an old recipe. Due to the high levels of mercury in today's fish, we do not recommend eating fish.

Ingredients
  • 1 medium onion, thinly sliced
  • 1 cup thinly sliced mushrooms
  • 1 1/4 cup olive oil
  • 2 pounds fresh salmon fillet, cut into 4 pieces
  • 3 egg yolks
  • Salt
  • Pepper
  • Lemon wedges

Instructions
  1. Preheat oven to 550°F.
  2. Heat 1/4 cup of the olive oil in a small skillet.
  3. Add onions and mushrooms, and sauté until limp.
  4. Cut four 12-inch squares of aluminum foil, and oil tops. Scatter onion and mushrooms in middle of each foil square and place salmon fillets on top, skin side down.
  5. Whip egg yolks and remaining cup of olive oil until foamy. Pour mix onto fillets. Salt and pepper to taste. Fold and seal foil packets securely and place in baking pan.
  6. Bake at 550°F 10-15 minutes, until the fish flakes easily when prodded with a fork. Place packets on plates for guests to open. Serve with lemon wedges.
