Recipe Connection: Cottage cheese vegetable casserole

  • 2 cups fat-free cottage cheese
  • 1 cup chopped broccoli
  • 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms
  • 1/2 cup fat-free plain yogurt
  • 1 can of sliced chestnuts or bamboo shoots
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/2 tsp basil
  • 1/4 ts thyme
  • 1/8 tsp pepper
  • parsley sprigs
  1. Combine broccoli, onions, and oil in non-stick skillet.
  2. Cook on medium heat until tender.
  3. Add mushrooms and cook 5 minutes; set aside.
  4. Combine remaining ingredients, except parsley, in large bowl; stir in cooked vegetables.
  5. Turn mixture into nonstick 2 qt. casserole dish.
  6. Cover and bake at 350 DegrF for 30 minutes or until bubbly.
  7. Garnish with parsley before serving, if desired.
