Recipe Connection: Broccoli cheddar bake

  • 8 cups fresh broccoli
  • 1 cup finely chopped onion
  • 12 eggs
  • 2 cups skim milk
  • 1.5 cups (6 ounces) cheddar cheese (shredded)
  • 1/2 tsp olive oil
  • 1 tsp pepper
  • 1/4 tsp thyme
  • black pepper to taste 1 cup skim milk

  1. Preheat oven to 350 degrees.
  2. In nonstick skillet, sauté broccoli and onion in olive oil until tender; set aside.
  3. In a bowl, combine eggs, milk, and 1 cup of the cheese. Mix well.
  4. Stir in broccoli, onion, and pepper.
  5. Spray 3 qt baking dish with nonstick spray. Pour the mixture into the baking dish. Set the dish into a larger pan filled with about 1 inch of water.
  6. Bake uncovered for about 45 minutes. (When a knife inserted in the center comes out clean, it is done).
  7. Remove from the oven and top with remaining cheese. Let stand about 10 minutes before serving.
