Ingredients
  • 1 bag Whole grain pasta spirals
  • 4 cherry tomatoes
  • 10 olives, pitted
  • 1 small bell pepper.
  • 2 cloves, garlic
  • 4 Tbspn basil
  • 2 Tbspn capers
  • 2 Tbspn Dijon mustard
  • 1 Tbspn balsamic vinegar
  • 1 Tbspn cup olive oil
  • 1 Tbspn parsley
  • Tspn oregano
  • 1/2 Tspn black pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup yogurt
Instructions
  1. Chop tomatoes into small bits.
  2. Chop garlic into small bits.
  3. Chop olives into small bits.
  4. Boil pasta per instructions on bag, using a large boiling pot. Do not overboil.
  5. Drain pasta after boiling.
  6. Immediately place pasta back into boiling pot
  7. Put heat on low.
  8. Add oil, mustard, vinegar, and yogurt. Mix.
  9. Add one spice at a time, and mix, until you have added all the spices.
  10. Add the chopped ingredients.
  11. Mix thoroughly.
  12. Chop the bell peppers and add.

This food has low-glycemic carbos, essential fats, calcium, and some protein. You can have this as a main dish with an additional protein source on the side, or you can throw in some chopped ham to bring up the protein quotient.
