Recipe Connection: Lemon Grilled Orange Roughy

Note: This is an old recipe. Due to the high levels of mercury in today's fish, we do not recommend eating fish.

Ingredients
  • 4 (1/4 pound each) orange roughy fillets
  • 1 tbsp olive oil
  • 1/2 tsp dried whole thyme
  • 1/2 teaspoon grated lemon rind
  • 2 tablespoons lemon juice
  • 1/8 teaspoon salt
  • 1/4 teaspoon paprika
  • Dash of garlic powder
Instructions
  1. Rinse fillets.
  2. Pat dry.
  3. Combine remaining ingredients, stirring well.
  4. Baste fillets with mixture.
  5. Grill over hot coals 5 minutes on each side or until fish flakes easily when tested with a fork.
