Ingredients
- 4 (1/4 pound each) orange roughy fillets
- 1 tbsp olive oil
- 1/2 tsp dried whole thyme
- 1/2 teaspoon grated lemon rind
- 2 tablespoons lemon juice
- 1/8 teaspoon salt
- 1/4 teaspoon paprika
- Dash of garlic powder

Instructions
- Rinse fillets.
- Pat dry.
- Combine remaining ingredients, stirring well.
- Baste fillets with mixture.
- Grill over hot coals 5 minutes on each side or until fish flakes easily when tested with
a fork.
